Three Major Categories of Food Hazards:

- Biological Hazards:
- Caused by bacteria, viruses or parasites that are present in air, food, water, soil, animals and humans.
- Food infections and food intoxication can cause:
- Diarrhea
- Nausea
- Abdominal pain
- Fever
- Can even result in death in some serious cases.
- Major sources of biological contaminants in food are;
- Soil and water contaminated by non-treated manure
- Cross contamination:
- Human contamination due to poor personal hygiene (clothing, skin esp. hands), human guts,
- Failure in infection control by not reporting illness
- Cross-contamination of food products spread from processing environment due to poor improper sanitation
- To prevent bacteria growth or other biological hazards:
- Preservatives
- Processing techniques (ex: dehydration)
Physical Hazards:
- Damage to the intestine - Damage to teeth or gums |
- Glass - Wood - Insects - Stones - Soil - Dirt - Jewelry - Hair - Fingernails - Plasters - Personal items - Bone - Nuts / bolts - Wire - Plastic - Paper - Cardboard |
Chemical Hazards:
- Lubricants - Coatings - Paints - Refrigerants - Water treatment chemical
- Fertilizers - Fungicides - Antibiotics - Growth hormones - Fish - Milk - Peanuts - Sesame seeds - Soy - Sulfates - Tree nuts - Wheat
- Scombrotoxin (histamine) - Mushroom toxins - Shellfish toxins |
